Kale and Roasted Sweet Potato Salad

Healthy and delicious this salad is truly a treat for your tastebuds! Combining superfood herby kale and scrumptious roasted sweet potato with salty feta and a tangy balsamic glaze! This tasty salad is not only good for your tummy, but looks fantastic too. Serve it up as a side dish or eat it on its own! Either way your tummy will thank you!

Kale and Roasted Sweet Potato Salad

Balsamic glaze: 6 tablespoons balsamic vinegar 1 tablespoon honey

In a small pot add the vinegar and honey. Bring to a boil then turn heat to low and leave to simmer till mixture has reduced and thickened. Should be able to coat the back of a spoon. Leave to cool.

Salad: 2 cups kale leaves Extra virgin cold pressed olive oil 1/4 teaspoon salt + 1/8 teaspoon salt 1 large sweet potato 4 yellow cherry tomatoes Feta cheese

Peel sweet potato and dice into bite size pieces. Place on baking tray. Drizzle with olive oil and sprinkle 1/8 teaspoon salt. Give a good mix with your hands to ensure all pieces are coated. Place in oven for 35 minutes at 180˚c till sweet potato is soft and caramelized.

Place kale leaves in a bowl. Tear into bite size pieces. Drizzle with olive oil and 1/4 teaspoon salt. Massage leaves with oil. This helps to reduce bitterness.

Take cherry tomatoes. Cut in half. Remove seeds. Then slice into thin strips. Add to kale.

Place kale and tomatoes in serving bowl. Add sweet potato. Then add feta cheese. Finally drizzle with balsamic glaze.
