Steak Stuffed Sweet Potatoes

A rich and satisfying combination of soft cooked steak and perfectly roasted sweet potato! The caramelized flavor of the sweet potato pairing beautifully with the richly spiced steak to form a match made in heaven!

Steak stuffed Sweet Potatoes

Wash 2 large sweet potatoes. Piece the skin with a fork or knife all around the potato then place on foil lined baking tray. Bake in oven at 200˚c for 1 hour.

½ medium onion thinly sliced ½ large bell pepper sliced fine 500 g thinly cut steak sliced into strips 1 tablespoon olive oil Salt and pepper 2 tablespoons Worcestershire sauce ¼ cup cream 1 Maggie beef stock cube

Add oil to pot with onions and leave to sauté. Once onions soften add bell pepper, salt and pepper and mix well. Leave to cook for 5 min. Remove from pot and set aside. In same pot add beef strips and Worcestershire sauce and cook till beef is no longer pink. Then return onions and bell pepper and mix well. Add cream and stock and allow to simmer on low heat for 5 min.

Once potatoes are roasted, remove from oven and cut down the middle. Fluff some of the inside. Add steak mixture on top.


(Optional: add cheese and grill for 2-3 minutes till melted and bubbly).

Enjoy hot.
